In Spain canned seafood has long been served in restaurants, bars and in the home as a delicacy. Scallops, or Zamburinas as they are referred to in Spain, are harvested from the Atlantic ocean off the Galician coast in northwestern Spain. They are preserved with tomatoes, onion, peppers, olive oil and spices. They can be eaten without cooking, or served warmed with a squeeze of fresh lemon, parsley and crusty bread!
