Ramon Pena only uses the finest quality anchovies fished from the Bay of Biscay in Cantabria. All anchovies used are fished during April to June as these are said to be the best months for anchovy quality. The anchovies are put through a 7 step production process to ensure the same quality in every single fillet. Over the last few decades Ramon Pena has been able to develop its own production methods, with a focus on sustainable fishing, in to ensure only the best products are being served to consumers worldwide. Best served on a plate by themselves and accompanied by Spanish olives and crostini or bread.
