The Lomo Ibérico is different than any cured product you have tasted. This pork loin is carefully selected, handled and cured to make the ultimate cured meat. Originating from the hilly region of western Spain, Lomo Ibérico makes the perfect appetizer or choice for a meat board because of its complex flavour and taste. The 100% purebred Ibérico pig is a native animal to Spain and well known for its rich, mouth watering taste and superb texture. The pigs are free to roam the forests of dehesa and feed on wild herbs, grasses as well as high-quality grains. Jamones Fermin is a family run business that pays extra attention to preserving traditional methods of caring, producing, and curing their products. The Ibérico loin is cured with a mixture of pimenton paprika, oregano, garlic and minimal salt which is rubbed in before drying. The loins are hung to dry for three months to produce a robust, deep flavour. Serve sliced thinly and paired with wine or Spanish sherry. Keep wrapped and in the refrigerator or in a cold dry place. Will keep for several months once opened.
