Ibérico de Bellota, considered the king of hams, is one of the most sought after cured meats in the world. Famous for its nutty rich flavour and its melt in your mouth texture. Ibérico de Bellota, also known as “pata negra” or the “black hoof” hails from western Spain in the dehesa forests near Salamanca. This three year old ham is immensely flavourful and is a prize for any gastronomic food lover to taste and enjoy. The most authentic experience is to shave a thin slice of the ruby red meat directly off of a cured leg. This special breed of black pigs can be found roaming in the forests, feeding on the enica acorns as well as wild herbs, grass and flowers. In the last months of their lives the pigs consume a plethora of fallen acorns and quickly gain several pounds a day. They can easily triple in size within few months. The acorns are an important part of their diet because they give the meat a nutty flavour and provide nutritious mono-saturated fats in the ham.
What also makes this Ibérico de Bellota unique is the way in which Jamónes Fermin specially cures them. They use a traditional method and the hams are hung to dry up in a mountain town in a place called La Alberca. The wind, temperature and climate all play a role in giving the ham its incomparable taste as the curing room has open screens to allow the air to pass through. A leg of Jamón Ibérico de Bellota is guaranteed to impress any guest and perfectly appropriate to celebrate a special occasion. This delicacy can be compared to the finer foods of the world such as Beluga Caviar or Kobe Beef – a show stopper. With the boneless jamón is a way to prevent any waste or loss of product when slicing and serving. Store the jamón in a cool dry place or refrigerator. Re-seal with vacuum or tightly wrap in plastic. Will keep for several months.
