Borrowing from the Moorish culture, Spaniards have being cooking Tagin for thousands of years. Tagin is the type of cookware and also the name of the dish you cook inside it. It’s a process of slow cooking various meats where by all of the moisture is contained inside its cone shaped lids. The moistures condenses, drips back into the meat ensuring it becomes perfectly tender. Our Tagin’s are glazed except for the bottoms to allow for cooking on various mediums including stove top and oven. Please note all Tagin’s should be cured before used for cooking.
