The Cabecero de Lomo Ibérico Collar is a delicious cut that comes from the famous Spanish Iberian pig. A highly-prized, juicy cut similar to pork tenderloin, it is fantastic but with even more marbling of fat.

The Ibérico pigs are a special cerdo breed that can only be found in Spain. Also known as the "black-footed pig", this breed is famous for its ruby red coloured meat and intense marbling of monosaturated fats - the good kind of fat! Jamones Fermin humanely raises these pigs in open pastures and feeds them a diet of high-quality grain for the last few months of their life.

We recommend grilling the collar at a high temperature, seasoned with a pinch of salt and pepper. Best served at medium rare. This meat is both juicy and delicious – perfect for a summer time barbeque dinner. Serve with a big glass of red wine and enjoy the richness of this unique Spanish meat.
